Kampen om den røde ko - dominerende temaer i dansk kvægavl i 1800-tallets slutning

An analysis of Danish 19th century literature on cattle husbandry and breeding reveals the tensions between arguments for profitable farming and for concerns about purity of race and national and regional identity. Ideals about the perfect dairy cow were challenged in the early 20th century and emphasis on production opposed to appearance became common in breeding and appreciation of cattle. The article concludes that investigation of animal use and representations of animals can throw new light on traditional historical questions.
